Renee's Story

Learning I have Celiac Disease brought me into a whole new world of nutrition.  If you have celiac, you are not alone.  Several years ago, my husband and I were training to run the Disney half marathon.  I enjoyed running, but I was so tired.  All the time.  All I wanted to do was take a nap.  Finally, I decided I had to get a handle on my fatigue.  After years of being anemic, and with no doctor able to determine the reason, I was shocked to receive the diagnosis of celiac.  I knew what celiac was, and had even counseled people on a gluten-free diet.  But boy, was I in for a rude awakening.  I was about to learn a whole new aspect in the world of nutrition.  Once I began following a gluten-free diet, my anemia, fatigue, nutritional status, and overall health greatly improved.  Looking back I had 5+ symptoms of celiac disease that no one in my life thought to look into as a health problem.

I help educate those with Celiac Disease, Gluten Intolerance, or other medical conditions in all aspects of the Gluten-Free Lifestyle to include finding hidden gluten through label reading, preventing cross contamination, meal planning, dining out, traveling, and other areas of gluten exposure besides food.  I can also help with other conditions that respond well to living gluten-free such as Dermatitis Herpetiformis, Hashimoto's Thyroiditis Disease, Migraines, ADHD, Anxiety, Eczema, and many others.
