Layered summer squash with mushroom and red pepper! The perfect summer side dish!
And of course it is naturally gluten free, whole food, plant based, delicious and nutritious!!
Ingredients
- 1-2 zucchini
- 1-2 yellow squash
- 8 oz whole mushrooms
- 1 red bell pepper
Instructions
- Thinly slice zucchini and yellow squash
- Slice mushrooms in round disc
- Cut bell pepper in slices
- Layer one vegetable on another in a pleasing layers way, with whatever size dish you are using.
- Sprinkle with Olive Oil, Italian seasoning and paprika
- Bake at 350 degrees for 30 minutes
