Ingredients
  1. 1-2 zucchini
  2. 1-2 yellow squash
  3. 8 oz whole mushrooms
  4. 1 red bell pepper
Instructions
  1. Thinly slice zucchini and yellow squash
  2. Slice mushrooms in round disc
  3. Cut bell pepper in slices
  4. Layer one vegetable on another in a pleasing layers way, with whatever size dish you are using.
  5. Sprinkle with Olive Oil, Italian seasoning and paprika
  6. Bake at 350 degrees for 30 minutes
