My niece Caitlin made this low carb, Gluten-Free Focaccia and we all loved it!

 

Leek and Roasted Garlic Focaccia Bread

Ingredients
  1. 2 Tbsp olive oil
  2. 1 leek, sliced into thin rings
  3. 5 cloves roasted garlic, mashed
  4. 4 eggs
  5. 1/4 c full fat coconut milk
  6. 1/3 c coconut flour, sifted
  7. 1/3 c golden flaxseed meal
  8. 1 tsp salt
  9. 1 tsp Herbs de Provence
  10. 1 tsp paprika
  11. Salt and pepper to taste
Instructions
  1. Preheat oven to 350*
  2. Slice leek thinly in circles.
  3. Sauté over medium heat in 1 tablespoon of olive oil until softened, but not browned, 5 minutes
  4. In separate bowl mix mashed roasted garlic cloves and leeks; set aside.
  5. To prepare pan: Use a 13×9 inch baking pan, brush with olive oil then place a piece of parchment paper the width of the bottom of the baking pan and long enough to overlap the ends of the pan & brush parchment paper with olive oil, set aside.
  6. Separate eggs; whisk egg yolks together.
  7. Beat egg whites in a medium bowl until soft peaks form, then add in the yolks
  8. Add coconut milk
  9. In a large bowl, combine sifted coconut flour, golden flaxseed meal, salt and baking soda. Fold egg mixture into flour mixture until just combined.
  10. Spread batter evenly in prepared baking pan and bake for 10 minutes.
  11. Remove baking pan from oven and scatter top of bread with leek and roasted garlic mixture, drizzle with remaining 1 tablespoon of olive oil, season with Herbs de Provence, paprika, and salt and pepper to taste.
  12. Return baking pan to oven and bake bread for another 10 minutes, or until edges begin to brown.
  13. Cool, slice, serve.
Notes
  1. It makes a great bread for sandwiches!
  2. If your taste palate isn't exactly on the salty side, leave out the salt to taste step when adding the herbs, paprika, and remaining olive oil before placing the bread back into the oven. It'll still be tasty nonetheless, I promise!
