Salmon Dinner

Salmon makes a great dinner idea, whether it’s just the family or a dinner party meal.  My husband does a great job cooking Salmon fillets on our outdoor grill.  It makes for a very healthy dinner, providing an excellent source of omega 3 fatty acids.

Grilled Salmon
Serves 4
Grilled salmon with little oil marinade to prevent dryness.

Ingredients
  1. 1.5# Salmon fillets or steaks with skin, 1 inch thick (Wild Caught if possible)
  2. Marinade
  3. 2 Tablespoons Fresh Lemon Juice
  4. 1 Tablespoon Fresh Lime Juice
  5. 1 teaspoon Kosher salt
  6. 1/2 teaspoon pepper
  7. 1/4 teaspoon paprika
  8. 1/4 teaspoon dry dill
  9. 3 Tablespoons olive oil
  10. 1 lemon quarters for garnish
Instructions
  1. Mix all ingredients together for the marinade
  2. Pour over Salmon steaks and allow to come up to room temp over 30 minutes
  3. Preheat grill to medium and oil the grates before placing the fish on the grill
  4. Place fish skinless side down first.
  5. Use a timer and wait 5-6 minutes
  6. Do not flip until 60% cooked through
  7. Flip over and finish cooking on the skin side another 5 min
  8. Do not overcook
  9. It will continue to cook for a few minutes when taken off the grill
  10. Once off the grill and let the fish rest before slicing or eating
Notes
  1. Serve with salad or asparagus.
