Toasted Pumpkin Seeds are a great benefit from carving pumpkins.  Eat them as a snack or put them on any veggie dish to provide a beautiful golden color and crunchy texture.

Ingredients
  1. Secure seeds from a large pumpkin or if you have several jack-o-lanterns, the more the merrier
  2. 2 Tbsp Olive Oil
  3. Salt
  4. Other herbs as disired
Instructions
  1. Preheat oven at 375*
  2. Rinse pumpkin seeds to remove any attached strings
  3. Add oil to pumpkin seeds and coat thoroughly
  4. Spread a single layer in shallow pan
  5. Sprinkle lightly with salt and other herbs as desired
  6. Toast for 10 min, stir in pan to flip seeds over, continue baking for another 10 min until brown and toasted
