Zucchini Golden Fritters
Zucchini is an abundant summer garden vegetable. This makes a delicious side dish. If you like mushrooms, first sauté then, then add to recipe at the end just before frying. They give the fritters extra moisture and flavor

Ingredients
  1. 1 large zucchini or 2 -3 small zucchinis
  2. 3 organic eggs or ‘Flax Egg if vegan’
  3. 2 cloves of garlic peeled
  4. 1 Cup fresh spinach chopped
  5. ¼ tsp oregano
  6. 1 tablespoon lemon zest
  7. ¼ teaspoon Onion powder or to taste
  8. 1 teaspoon salt or to taste
  9. ¼ teaspoon of pepper or to taste
  10. ¼ cup gluten free flour
  11. 2 Cups gently sautéed mushrooms optional
Instructions
  1. Grated zucchini to make 4 cups. Place zucchini in a large bowl.
  2. In blender mix eggs
  3. Add to blender - garlic, spinach, oregano, lemon zest, onion powder, salt and pepper. Pulse blender a few time to mix eggs and combine ingredients. Add GF flour and pulse just enough to blend.
  4. IF adding mushrooms, add to blender with GF flour and pulse just enough to chop mushrooms and mix altogether.
  5. Pour entire egg mixture over zucchini and blend together in bowl.
  6. Heat ¼ cup sunflower oil in a large sauté pan over medium-high heat until the oil sizzles when you drop a small amount of zucchini mixture into the pan. Carefully drop 3 tablespoons of mixture into skillet; smash with fork into fritter. Repeat leaving enough space for fritters to not touch each other.
  7. Cook fritters 2 to 3 minutes, until golden. Turn fritters, and continue cooking on the other side 2 to 3 min.
  8. Place fritters on wire rack over oven proof plate and keep warm in 350 oven.
  9. Cook remaining zucchini fritters. Add oil to pan as necessary.
